Pear mousse

Ingredients (for 8 people):
2 pears;
300 g of sugar;
500 ml of white wine;
1 lemon;
4 isinglasses;
100 g of icing sugar;
400 g of pressurised whipped cream;
Synthetic vanilla extract;
50 of honey.
For decoring
Canella;
16 wafer similar to a drinking straw.


Cut the pears in two parts from the top to the bottom, remove the seeds and the peduncle. Put them into a bowl with a mixture of water and lemon juice (1). In another pan put the white wine with the honey and the sugar. Let boil for 2 minutes and put the pears (2). Let boil again, whisk the pears with the soft isinglass (put in the water for a few minutes before). Mix the whipped cream with the pears from the bottom to the top. Add the synthetic vanilla extract and the icing glass (3). Put into the fridge for 3 hours and decore with wafers and canella. 

Conservation: into the fridge, consume it until a day.
